Snack attack! Roasting chickpeas for little handful of delicious goodness is probably the best idea I’ve ever heard of. Chickpeas, also called garbanzo beans are a great source of vegetarian protein and a good source of fiber. They’re a staple in many Indian foods and they’re what hummus is made of! If you want to try one of your favorite foods a different way, try roasting it. I roast all kinds of vegetables from green beans to rutabaga, to turnips and beets. Try roasting chickpeas today!
1-2 cans of chickpeas (garbanzo beans), drained and patted dry
1-2 tbsp olive oil
Seasoning of your choice to taste – tonight I chose a mix of garam masala and tandoori masala
Lemon juice to taste
Preheat oven to 450°. Open chickpeas and drain liquid, then pat dry. Place on a large cookie sheet and toss with olive oil and seasonings. Roast for 25 minutes, or until slightly browned and crisp.
