Quick Red Potato Salad with Scallion and Capers


This was so good i had to blog it really quick!!

Just finished making this kick ass potato salad for July 4th.

2 lb red potatoes
1 cup veganaise
1/4 cup spicy brown mustard
1/2 tsp ground mustard seed
1/2 tsp celery seed
1/2 tsp black pepper
1/2 tsp salt
2 tbsp capers
1/4 cup chopped scallions
2 tbsp white vinegar
1/2 tsp garlic powder
1/4 tsp chopped pickles

Quarter and boil potatoes until softened but not mushy. Let cool to room temp. Add all remaining ingredients to large mixing bowl and mix away. I smashed my potatoes a little because I wanted it to be super creamy but also super chunky. Chill and serve.
