Cucumber Melon Cooler

The end of summer is near! That means cooler weather, savory fall entrees and here in Florida, well, it’s still hot and humid! We don’t normally get a break until late September or early October. Even then it’s still hot, but much less humid. So, if you want to sneak in one more refreshing summer beverage before it gets to chilly, or it’s still warm where you are, this is the one to try.

 

1/2 cucumber
1/3 to 1/2 honeydew melon cut into chunks, rind removed
1/2 cup white sugar
2 cups water

Place all ingredients in blender and liquefy. Strain through a fine metal strainer to remove foamy chunks and bigger solids. Serve immediately over ice or chill in the fridge. Would be good with a splash of vodka or rum too!
