My niece and nephew are visiting from the Philly area this week and I wanted to try out one of my confections on them. Timmy has a major sweet tooth and loves anything chocolate, so he literally devoured this stuff. Kylee doesn’t really like chocolate, but she dipped several strawberries in it, as well as her grapes. They loved it! So easy and fast to make, and they don’t know they are eating tofu. Sure it’s sugar, but hey, better than the Jello gelatin stuff.
1 block shelf stable silken tofu (not the refrigerated kind), like Mori Nu brand
3 tbsp baking cocoa
1/3 cup sugar or agave nectar
1/2 cup plain sweetened soy milk
2 tbsp regular brewed coffee
Add all ingredients to the blender and put it on the “liquefy” setting until it’s blended smooth. I like to serve mine with a few slivered almonds and some sweetened coconut shreds.
