I used to love egg salad until I realized how much cholesterol was in one egg. Enter ye old tofu to the rescue! I’ve even turned my mother onto these to help her achieve success in her less-meat endeavors. Now if my dad wasn’t such a meat-and-bread-only kind of guy…he’s trying though!
Ingredients
2 oz weight firm tofu, crumbled
2 tsp yellow mustard
2 tsp vegenaise
1 tbsp finely chopped green onion
Dill to taste
Black pepper to taste
Make:
Mix all ingredients together and spread onto wheat bread!
