Curry Coco-nutty Banana Wrap


Curry coco-what wrap? Yes. This is probably one of my favorite sandwiches, and it’s so easy to make! The inspiration for this sandwich comes from one of the most awesome vegan restaurants in central Florida called Dandelion Communitea Cafe. Their original version of this sandwich, which they call the Polynesian Banana Fantasy, totally rocks my socks right off my feet.  I absolutely had to make my own version of it because now I live all the way over in Tampa and can’t visit them anymore. Their version has a few different ingredients than mine. I told my veg-curious mother about this sandwich and she said, “Bananas…and lettuce?” Yes! Bananas and lettuce AND curry powder! The sweetness of the coconut and banana marry deliciously with the savory flavor of the curry, which compliments the warm, nutty taste of the pecans thus making one of the most interesting sammiches you may ever consume!

Ingredients:
1 medium banana, cut into lengthwise strips (you’ll only need about 2 strips)
Alfalfa sprouts
Shredded carrot (I use the kind that comes shredded already)
Leaf lettuce
Crushed pecans (or walnuts)
Finely chopped celery
Curry powder to taste, like Badia brand
1 tbsp Vegenaise by Follow Your Heart brand
1 La Tortilla Factory Low Carb wheat tortilla

Make:
Cut the banana lengthwise into strips (not circles). You will only need a couple of strips for the wrap. (Enjoy the rest of the banana on the side.)  Spread Vegenaise onto wrap, then dust with curry powder. Add bananas first, then the rest of the ingredients. Roll it up and chow down!
